Two demos were released for Tomb Raider III: A very early demo featuring Lara in a prison, and a closer-to-final demo taking place in some overgrown jungle ruins.

There's probably more stuff, but it would take somebody more well-versed in Tomb Raider III to describe what's different.

Included with some issues of Official U.S. PlayStation Magazine and some copies of Pandemonium, as well as on a demo disc included with Double Life - Music for PlayStation.

Unused Cutscene

In an internal file named CUT10 exists a cutscene of Lara waking up on a bed in her prison cell. The cutscene isn't fully rendered and doesn't have any audio contained. In the full release of the game, the cutscene does not exist.

Debug Mode

Press L1 + R2 + X + Square during gameplay. If done correctly, Lara will begin swimming. While in this state, she is totally invincible. It was probably used by developers to get around levels quickly, and can only be enabled in this prison demo.
