There's also this one, which can't be triggered in-game. The pre-level cutscene also seemed to be hinting at a way to stop the fake coins (according to this older review). LinkTheLefty 16:01, 18 June 2012 (EDT)
There's also the fan cutscene, but the uploader claims that it was recorded off a real console so they may not be unused after all... However, I did spot some unused individual hotel victory themes uploaded on YouTube. Here are Hotels 2, 3 (apparently heard in the "toaster" animation), 4, 5, & 7. I think LuigiBlood can be trusted, so I believe they are legitimately unused. LinkTheLefty 17:24, 20 August 2012 (EDT)

Hotel Mario Prototype

Hi everyone, this small youtuber found a beta version of Hotel Mario and demonstrated some differences in cutscenes in this video: https://www.youtube.com/watch?v=tk2i07t-uE4 -suspiciouslyBee
