Unused Graphics and Text
There are eleven unused portraits for Geese Howard, Nightmare Geese Howard, Goenitz, Igniz, Sie Kensou, Krizalid, Robert Garcia, Omega Rugal, Takuma Sakazaki, Original Zero, and Clone Zero stored in the Data\ui\secretimage folder. These were originally used when unlocking the game's hidden characters in earlier console versions of the game, but since they are available from the start in this version, these go unused.
Some text strings related to unlocking these characters still exist in the game. (The text has been formatted for legibility.)

Unused Audio
Unused Iori Super
This voice was used in The King of Fighters 98 for his Ura 108 Shiki: Ya Sakazuki super move. While Iori did not use that move from 99 until 03, Orochi Iori (who appeared in the console ports of the original 2002) utilized that move. Maybe Iori would have used that super here in lieu of Orochi Iori?
Chip KOs
As both Goenitz and Geese Howard were ported from SNK vs. Capcom: Chaos, which had separate voices for both regular and chip KOs, these two voices end up unused, due to Unlimited Match sharing the same voices for both regular and chip KOs.
Unused Characters
Orochi Iori
Despite incomplete, the character data of Orochi Iori from SVC Chaos and PlayStation 2 version of the original 2002 remains in game files and can be used. However, some of his moves can crash the game.
