Starting at 0x783B0 is a list of unlockables, among which are some unused characters.

The different skins (for Chef, Cartman, Stan, Kyle, and Kenny), Ms. Cartman, Mrs. Broflovski, and Scuzzlebutt are playable in every other version of the game. Mrs. Crabtree and the Tractor aren't, though the Tractor does appear in-game as an obstacle and the school bus is internally referred to as "crabtree".

Applying the below GameShark code then pressing the GS button while in the car select screen will replace Stan with an unused car. You can't actually play as them, however.
