South Park Rally is a kart racer based on, believe it or not, the long-running Comedy Central series, South Park. Hard to believe, I know.

Sprites for ChickenLover and Ms Crabtree that were supposed to be on the Select Dude screen.

She can only be playable through hex editing the slus/sles file. The voice files are still intact.

The item is a reference to the episode Mecha Streisand, the triangle of Zanthar being the item that turned Barbra Streisand into a mecha. The item had its own item box, most likely acting like the Pink-Eye pickup.
