Mortal Kombat Mythologies: Sub-Zero is the last original game to use digitized sprites. Surprisingly, it is not the last Mortal Kombat platformer.

This sprite indicates there was a hang gliding monk enemy. A promotional video shows three of these enemies flying in the Wind level near the spinning devices with platforms on each side. They attempt to drop a bomb on the player.

An unused prison warden enemy. There are similar enemies in the Neatherrealm level, but this one has a different weapon.

The game contains one sequence track scrapped from the final release, which is found within the Wind stage.

The GameShark code above can only be used in the Wind stage. After the game completely loads to the spawn point, enable the code by pressing the L2 + ◯ buttons together, and advance forward until the point where the music would naturally play. The original track will be replaced with the unused track.
Playable NPCs
It is possible to play as several NPCs by using a character modifier on a GameShark. They are only known to be playable in a stage in which they are loaded. Enter code 800E8140 00?? or 800E8258 00?? (This may only be for Earth Stage).

Unused Level

One of the levels in the LEVELS folder, labeled ROCKY, contains data for an unused level. The last modified date for the ROCKY.LVL file is April 30, 1997. The other, used levels were last modified in either July or August. Unfortunately, the TSQ and TXD files required to make this level work are no longer present on the disc.
Given the name and the title of the BIN file within (ROCKMAN.bin), it's possible that this would be a separate arena for the Earth boss. In the final game, only the Fire God gets a separate level.
This video shows an unused level at 0:32 which may have been the actual Rocky level (you can also see a screenshot here). It appears to be a level with a simple rocky background with a spiral pathway to move up. Obviously early in development.
