Mentathalon
This was a cut sidequest/minigame where Razputin races the other interns through the outside map, possibly through the Quarry and/or Questionable Area. Hollis Provides you with a map to follow and warns you of dangers along the way. Given the context, it is likely that the Mentathalon was a platforming challenge.
These are also the only lines indicating most of the interns' full names, aside from Adam, who tells you during an optional interaction in-game.

Training
Psychonauts 2 uses an upgrade system for PSI powers based on intern credit which allows you to upgrade certain powers at will via the menu. These voice lines suggest that there may have once been an alternative PSI power levelling system, based on training with particular characters specialised in certain PSI powers (eg. Milla for levitation, Sasha for marksmanship, or Lili for pyrokinesis) which was later removed from the game.

These lines suggest a more adversarial relationship between the player and the ingredients, as opposed to the morbid enthusiasm for being selected, cooked, and eaten in the final release. There are also food items mentioned that are not included in the game.

Hemispheres
There are unused lines for a location called "Hemispheres". It was presumably the original concept for a shop area, instead of the Otto-Matics we've got in the final game. Judging from these lines, enhancement pins, dream fluffs and a scrapped item called "dream beans" were all sold there. The shopkeeper was also supposedly not Otto, since he is voiced by Darin De Paul (who is also the voice of Truman)
