This subpage details unused graphics in the game. There are a LOT. Many of them would go on to be used in the PSX version of the game, particularly the story elements.
To do: There's still way more to be done! This game was made in 30 seconds after all.

Characters
Alessi
A singular frame of Alessi with a crossed-out box.
Avdol
Avdol falling on the ground and getting up. The first two frames have an onomatopoeia that says "Shindo" (しんどう) that translates to "vibration" or "rumbling".
14 uncolored frames of Avdol doing a circle motion with his hands.
Magician's Red's legs with a red box next to them.
Two more boxes, now orange and one thicker than the other.
Some crudely-drawn text reading "Kurae! Reddo Baindo!" (くらえッレッドバイーンド!!) It translates to "Take this! Red Bind!" Red Bind is the name of Avdol's grab, and this was likely supposed to be used with it.
Black Polnareff
A set of frames showing BPol doing a cocky finger wag, similar to normal Polnareff. It's not just a palette swap, as BPol does have a unique smiling facial expression while he does it (though his streak of blood on his face doesn't seem to be there) yet the animation ends up going unused.
2 Xed out BPol frames, using a crudely-drawn red X instead of the crossed-out boxes many other characters have.
A set of crudely-drawn unfinished frames that seem to be an earlier version of one of Black Polnareff's special moves.
And one more frame that's very corrupted. This is likely an uncleaned scan from the manga.
Chaka
Unfinished frames of Chaka blocking high, low, and while crouching.
An unfinished set of frames of Chaka doing one of his Stand ON attacks.
Hol Horse
Some unfinished Hol frames.
Iggy
A giant kanji of the word "Dog", complete with a paw print. Likely intended for it you finish an opponent with Iggy's Raging Demon-esque attack, due to the kanji for dog (犬) looking similar to the kanji for heaven (天), the latter of which appears when you defeat an opponent with Akuma's Raging Demon in the Street Fighter games.
Jotaro
Frames of an unfinished jumping (and landing) animation for Jotaro.
An odd, unfinished handful of frames showing Jotaro doing some kind of turn. May have been a blocking animation while his stand is out.
Some Jotaro frames where he's all yellow for some reason. A couple of them seem to be based off of the unused "turn" sprite above.
Star Platinum has a staggering amount of unused sprites. Here's a set of frames where he's orange and red for some reason:
Some kind of hurt animation for Star Platinum. Likely intended for if you stand crush (deplete the opponent's stand gauge while they're blocking) Jotaro.
Another hurt animation similar to the one above.
An unfinished version of Jotaro's Stand ON close heavy punch.
Here's an interesting one: There are a set of unfinished frames that seem to show a kind of anti-air punch for Jotaro's Stand ON. No move like it exists in the final game.
Another interesting case. This looks like an alternate version of Jotaro's Stand ON crouching attacks.
Some smear frames likely for Star Platinum doing a punch, evidently unused by the fact that a couple of the frames have the bright green that covers a lot of Star Platinum's unfinished sprites.
Khan
Unfinished frames of Khan's spinning attack.
Midler
A single, unused frame of some mugs sitting on a table. Probably meant for an intro or cutscene where the table turns into High Priestess.
Joseph Joestar (Old Joseph)
This small, crossed-out box replaces some Old Joseph sprites. Young Joseph also has this box, but it's purple in his case.
Giant text saying "HELP ME!" "OH MY GOD!" "HOLY SHIT!". Joseph says these lines (in English) in the manga, so it's safe to assume they belong to him.
Petshop
An unfinished handful of frames for one of Petshop's command normals. They're right next to the finished version of the animation in the object viewer.
A couple of frames with a blue box next to them.
A non-transparent, singular frame of Horus.
4 frames showing a closeup of Petshop's eye as he looks toward the camera. Probably meant for some kind of intro or cutscene, similar to how the used "eye closeups" are utilized ingame.
Polnareff
Two unfinished hurt frames for Polnareff.
A strange case, as these frames are actually under Vanilla Ice's sprites in the Object Viewer. Most likely intended for a cutscene where Iggy saves Polnareff, and then Polnareff kills Ice.
2 unfinished frames showing Silver Chariot with its armor off attacking.
A set of frames that seem to be Silver Chariot attacking low. It strikes a resemblance to Black Polnareff's crouching jab, but the frames appear to be unfinished.
Some unfinished frames that look somewhat like a blocking animation for Silver Chariot.
Rubber Soul
4 unused frames that suggest Rubber was supposed to have a special defeat animation, where his stand dissolves to reveal his real head.
Here's a mockup of what the animation may have looked like.
Vanilla Ice
A boatload of sprites that show Vanilla Ice attempting to punch someone (presumably Polnareff) then getting slashed apart and disintegrated. Almost certainly intended for an updated cutscene of his death.
Some frames of Ice injured, with bleeding and non-bleeding variants. The non-bleeding versions would probably have been used in censored versions of the game. Likely also intended for a cutscene.
Unused frames of Ice looking up in surprise. Likely intended to be used in a cutscene in tandem (no pun intended) with the unused sprites of Polnareff being held by Iggy on the ceiling.
One of the most well-known pieces of unused content in this game, Vanilla Ice has a full animation of Cream eating Avdol's disembodied arms. Often theorized to be for an intro.

Vanilla Ice peeking out of Cream. The pose Cream is making is used in one of Ice's win poses, but Vanilla Ice can't be seen inside the used version.
6 frames of Cream opening its mouth to reveal Vanilla Ice talking. Might've been used for a taunt.
JoJo (Young Joseph)
A handful of frames presumably leftover from JoJo's Venture, judging from them using the Venture design for Young Joseph. They don't seem to conform to the new palette completely.
Unused/Boss Characters

Boss Vanilla Ice
An animation of Cream turning... with Ice inside of it. Boss Ice has a lot of frames where he's inside of his stand, though this never actually happens ingame. Perhaps Boss Ice was originally going to go inside during his Stand ON like playable Vanilla Ice does?

Cameo
The only leftover for Cameo besides his defeat portrait and some text. An animation of him exhaling through his pipe. Found within Magician's Red's sprites in the object viewer. Likely intended for a cutscene.

Death 13
3 frames of Death 13's user, Mannish Boy, closing his eyes. You can actually see one of the frames ingame by using cheats to play as Death 13 and having him be transformed into a child by Alessi, implying this may have been intended as Death 13's child mode. It could also be for a cutscene.

English
Text for Kameo/Cameo, J. Gail/J. Geil, Enya, and N'Dool/N'Doul, suggesting the former 3 were meant to be playable and/or play a part in the story mode. N'Doul is in the story mode, but upon being defeated by him, it'll just say "LOSE", so the only way to see this text is by selecting him using cheats and winning a match.
While these characters ARE used (except N'Doul), they have different names in the English translation (Iggi/D'Bo/Chaca/Iced/Alessy/N'Dool respectively). These seem to be more accurate translations of the names, possibly changed mid-development to avoid copyright. (JoJo famously names many of its characters and stands after real-life musicians, songs, albums, etc.)
Unused WIN text for Death 13. Losing against Death 13 ingame just displays the "LOSE" text instead of this. This can be displayed by winning a game while PLAYING as Death 13 (cheats required, of course).
Unused Story Mode Elements

English Story Mode Text
Unused story mode text implying Petshop and Hol Horse could be fought in the story mode at one point.
Story mode text for 3 unimplemented characters.
You do fight Vanilla Ice in story mode, but the story mode text at the beginning just says "Cream". This uses his full (and correctly translated) name instead of "Iced" as well.
Unused Tarot Cards
The Tower of Gray tarot card, unused because Gray Fly was never properly implemented into the game, much less the story mode. This card and its palette were later used in the PSX version for the Super Story Mode.
The Justice tarot card, once again unused due to Enya getting scrapped in the arcade version. This card and its palette were later used in the PSX version for the Super Story Mode.
You know the drill. Cameo was never put into the arcade version of the game, so the palette and card weren't used until the PSX version.
The Horus tarot card, giving more evidence that Petshop was originally going to be an opponent in Story Mode. Used in the PSX version.
The Emperor tarot card, suggesting that Hol Horse was originally going to be an opponent in Story Mode. Used in the PSX version.
Probably the most interesting case out of the unused tarot cards, as J. Geil isn't in the game as his own character, but this is also the only tarot card that doesn't show up in the PSX version.
Unused Character Select Text
Similar to some of the unused English names above, these seem to be more accurate, earlier translations of a handful of characters' names.
Other
Unused frames for a joystick and button exist. Might've been intended to be used in the Attract Mode as a tutorial for some commands.
Some unused fire effects. It looks very reminiscent of Pyron's fire in the Darkstalkers franchise, and may have been a leftover from there.
Part of the VS. screen in Venture. The VS. text is still used in HFTF, but this exploding red backdrop is not.
An unused, larger version of the "To be continued..." arrow.
An arrow that says "FREE". Might have been meant for the Challenge Mode.
