Diablo (Windows, Mac OS Classic)/Cut Quests
This is a sub-page of Diablo (Windows, Mac OS Classic).
All of the quests on this page, with the exception of "Strange Map", are using assumed names. While there is very little surviving information about these quests, a lot of the lore behind them wound up being used later on in Diablo II. Some mods and remakes such as Tchernobog have implemented them.

Strange Map
Also known as: The Map of the Stars.
The player would presumably find a "Strange Map" item that would be given to Cain, and the player would be told its true purpose: it is a countdown timer for when Diablo will be "at the full height of his power." This quest is the most complete of the cut quests, and several pieces of evidence point to this quest being cut very late in development. (Indeed, in some prerelease screenshots, we can see a "Strange Map" quest present in some quest logs, which is probably either this quest or Wirt's treasure hunting map)
The inventory item graphic of the map and a line of dialogue from the quest are reused in Hellfire for the Grave Matters quest.
There is a cinematic that would've played when the countdown timer runs out: /gendata/doom.smk. This video is directly referenced by the game code, but is inaccessible.
There is an unused series of frames located in /items/map/. It is meant to appear as a fullscreen graphic when the map is used, and shows how much longer there is in the countdown.
Finally, all of the townsfolk have conversation topics about the map.

When the two stars on that map align, Diablo will be at the height of his power. He will be all but invincible. You are now in a race against time, my friend. According to lead game designer David Brevik, this quest was cut due to adding an undue sense of urgency to the gameplay.
The Butcher's Chamber
There is evidence that reaching the Butcher would have involved a small puzzle. For starters, an unused Smacker video file is included with the game: /gendata/fbutch3.smk. Smacker videos don't usually appear unless the player is entering a special area - for example, when reaching Lazarus' lair.
Additionally, there is dialogue from the townsfolk involving the Butcher's chamber:

Lair of the Worms
This quest involves clearing out worms from an unnamed townsfolk's cellar. An unused area exists for this lair, as well as dialogue, and some backing code related to worm enemies.

Wirt's Treasure Map
This quest would've taken place entirely in town, and involves finding a secret treasure. Portions of the dialogue are reused for a quest in Hellfire.

Fleshdoom/Shadowfang
This quest would've been given by Tremain, a cut townsfolk. Initially, it would've involved killing a demon known as Fleshdoom and retrieving his blade - Shadowfang. After giving the sword to Tremain, he dies, and his dying wish is to destroy Shadowfang in the Hellforge.
Two elements of this quest were reused in Diablo II. First, Shadowfang exists as a weapon in that game. The player also visits the Hellforge on two separate occasions - once ingame to destroy Mephisto's soulstone, and once in a prerendered cutscene to destroy Diablo's soulstone.
The presence of this quest creates a paradox - the Hellforge almost certainly would've been found before Lazarus, and yet Tremain also provides dialogue for starting that quest. It's possible that the game would've randomly decided on one of these two quests to choose from, similar to how most other quests are randomly spawned.
Unfortunately, all that exists of this quest ingame is the dialogue behind it.

Island of the Sunless Sea
This quest would've been given by Farnham, and involves finding some kind of mythical location. Unfortunately, all that survives is unused dialogue in the final game. Notably, this is the only quest that Farnham is directly involved with - cut or otherwise.

Izual
One of the cut quests involves hunting down a fallen angel named Izual. Presumably his blade, Azurewrath, would be the reward for killing him. This quest was repurposed for Act 4 in Diablo II. Unfortunately, all that exists is dialogue by the townsfolk, and some dialogue spoken by Izual. Notable is that this quest is initiated from Gillian, who otherwise doesn't have much of a role in the town besides being a gossip.

The saga of Izual takes place during the lost battles in Hell. Izual was an angel who was given charge of a holy rune blade, Azurewrath. Leading a daring assault on the Hellforge, Izual was set upon by hundreds of blackened demons and was fatally wounded. The fiends cast the dying angel into a dark pit where the powers of chaos transformed him as he drowned in a whirlpool of burning blood. Evil possessed Izual. The feathers of his wings burned away to reveal leathery skin and horns ripped through the flesh of his head.
When he finally arose from that black pit, Izual was an angel no more. Transformed into a creature of evil, he was once again given charge of Azurewrath, assuring that the blade would never again be used against the denizens of Hell. |

Andariel
This quest would've been something a little different. Instead of fighting a monster within the cathedral, this quest would've involved going into the forests outside of Tristram and fighting a succubus boss named Andariel. While this quest doesn't appear ingame, Andariel does appear as an act boss within Diablo II. Just like Izual, this quest is notable for being one of the only times that Gillian is involved in a quest - she does not give any quests or offer much besides gossip in the retail game.

Horazon's Sanctum
This quest seems to involve finding Horazon's journal and inner sanctum. There's some unused player character dialogue (see the subpage), several unused lever objects, and townsfolk dialogue involving the quest. Additionally, there's a line of dialogue labelled wlock01.wav which may or may not be related. The basic gist of the quest seems to involve infiltrating the sanctum and defeating two demons who are lieutenants of Azmodan and Belial, as well as possibly Horazon himself. Elements of this quest are appear in later entries of the Diablo series. Towards the end of Act II in Diablo II, the player character visits Horazon's Arcane Sanctuary and read his journal. Belial and Azmodan feature as Act-end bosses in Diablo III.

Side Quests
Many of the townsfolk have dialogue for small "side quests" that aren't discussed with other townsfolk. These range from simple fetch quests to more elaborate, multi-stage treasure hunts. Since the item(s) desired by the character isn't explicitly stated, perhaps the goal item was to be randomized, similar to Skyrim's radiant quest system.
Deckard Cain and Farnham are the only townsfolk that don't have any side quests.
