The Legend of Zelda: Tears of the Kingdom has a variety of unused items, ranging from shrine equipment to cutscene items and Yiga Clan members.

Ancient Hero's Aspect
An unused version of the Ancient Hero's Aspect armor exists with models and inventory icons for the body and leg pieces, called Armor_1036_Upper and Armor_1036_Lower. Instead of transforming Link into the ancient Zonai hero, it simply has Link wearing the garb that the ancient hero wears.
Zonai Arm
Data for Link's Zonai arm as an item can be found in PouchActorInfo, categorizing it as "Armor" with an ArmorRank of 1.
Master Sword
There are unused versions of the Master Sword called Weapon_Sword_071 and Weapon_Sword_071_Broken. They reference some parameter files from the regular Master Sword, Weapon_Sword_070, but have no WeaponParam or inventory icon.

Shrine Equipment
Various shrine objects have inventory data in the files, including the large unicorn style beam emitters and laser tripwires found in shrines. These are labelled as DgnObj_BeamDevice_Static and DgnObj_IRBeamDevice_Static_Beam respectively, and are valid materials for cooking and resale purposes too. Once summoned, they'll immediately appear in the world with full collision and behaviour, and will either stick around if Link drops them/puts them down, or vanish if he puts them away.
Master Kohga's Rock Ball Projectile
This is a valid inventory item under the name AssassinRockBall. If held it will constantly explode until placed down or put away, albeit without harming Link or other NPCs.
Treasure Octorok Chest
The fake treasure chest used by Treasure Octoroks, which is a valid inventory item under the name OctObj_Stone_TBox. Once summoned, it will fly through the ground and despawn very quickly, though it can push around NPCs in the process.
Cushions
These are the cushions used in the Starlight Memories store in Gerudo Town, which are inventory items named Obj_Cushion. These don't have any collision and will ignore gravity once summoned, and can be sold to shops or NPCs for 500 rupees.
House Rooms
All house rooms from the Dream Home construction mini game are valid inventory items. These have names prefixed Obj_LinkHouse_, and usually fall through the ground if held. However, they can be used if held while gliding (which gives them proper environmental collision), and can hence be used to build a house anywhere in the game. The first few of these actually use the unused house room inventory icons too, though the rest of them have no icon in the menu.
Interestingly, the rooms using the unused icons are impossible to sell to shops, while the others can be sold just fine.

Yiga Clan Members
All NPCs in the Yiga Clan Hideout are classified as inventory items internally. These will also fall through the ground if held normally, but can be summoned properly if held while gliding. For the most part, they merely act as NPCs once added to the world, though some of them do have other effects.
Npc_Assassin_Junior
A standard Yiga Footsoldier NPC, which cannot be spoken to.
Npc_Assassin_Junior_Azito002/Npc_Assassin_Junior_Azito003/Npc_Assassin_Junior_Azito004
Yiga Footsoldier shopkeepers from the Yiga Clan Hideout. They can be used as mobile shops, since they will still buy items regardless of what map they're used in.
Npc_Assassin_Middle
A standard Yiga Blademaster NPC, which cannot be spoken to.
Npc_Assassin_Middle_Azito001
The Yiga Blademaster running the combat mini game in the Yiga Clan Hideout. The game will crash if more than one of these guys is summoned from the inventory at any one time, but otherwise he has the ability to start said mini game from anywhere in the game. This lets the player escape from any boss battle, mini game or other event, since Link gets warped to the hideout once the mini game starts, and the ability to save and teleport are unlocked once the mini game ends.
Unused Zonaite
Item_Ore_N is an unused type of Zonaite that can be added as an inventory item, and uses the unused icon listed in the unused icons section. However, shopkeepers will refuse to buy it, the game refuses to let you select it alongside other materials, and the menu will break entirely if it's selected on its own. The latter effect disables all buttons in the menu, and sometimes replaces all of Link's weapon icons with pictures of Link himself.
Interestingly, this is treated as a valid choice of crop for the farm next to the Hateno Village School. If planted, it will either not grow at all (if used first), or provide the player with more of the previously harvested item (if used after something else has successfully grown there).
Unused Winterwing Butterfly
Another copy of the Winterwing Butterfly can be found in the game's files as Animal_Insect_NA. This is identical to the regular one as far as functionality goes, with only the icon being absent.
Unused Torches
There are three unused torches in the game's files, two of which are based on Zelda's Torch from the intro.
Npc_Zelda_Torch
Zelda's Torch from the intro, complete with a normally unseen inventory item. For the most part it acts like a traditional torch, though it will automatically be lit if the player switches to it from another weapon in the quick select menu. Interestingly, it can be used as a lit torch even with another object fused to the end of it, which looks very strange to say the least.
Weapon_Sword_043_SetFire
Another copy of Zelda's torch from the intro, albeit without the inventory icon. In every other sense, it's identical as far as functionality is concerned.
Demo910_Torch
A strange torch that acts more like a sword, due to having the same parameters as a Traveler's Sword. It has no icon, zero listed attack power, and a strange setup for fusing items, meaning that anything fused to this weapon will float about 2 feet in front of it.
Default Armour
Armor_Default_Lower and Armor_Default_Upper are dummy armour pieces. If selected, they will remove the relevant piece of armour that Link's currently wearing instead.
