Survivor Portraits
Phil
Phil, from the Side Mission "Will Or Away".
Kent DeMare
Strangely, Kent DeMare from the Side Mission "Blood Barter" has a portrait, despite him not having any unused survivor dialogue.
Big D
Big D, from the Side Mission "Lesser Evil". Weirdly, the survivor depicted is certainly NOT Big D, but his silhouette can be seen behind him. Even weirder, when the texture is extracted, the survivor is cropped from Big D's silhouette.
Nikki
Nikki, from an unused Side Mission titled "Till Death Do Us Part".

Quite a few unused item icons can be found in the files, however there's far less than Dead Rising 2.

Social Achievement Icons
"Social Achievements" was a feature planned for Dead Rising 3. It's unknown how they would've worked, but judging by unused placeholder icons, they had something to do with Facebook.
Combo Weapon Blueprints
Most of the cut combo weapons have blueprints to go with them, except for the Thirst Quencher.
Spear Launcher blueprint. The combo weapon was in Dead Rising 2, but had a much simpler design.
Auger blueprint. The combo weapon was in Dead Rising 2 with a similar design. No other remnants of the Auger can be found.
A blueprint for a combo weapon called "Random". Features the Glove Gun, Chop N' Talk, and Sentry Cat.
Despite not being a combo weapon, even in pre-order builds, Frank's Zombie Slugger has its own blueprint.
Despite not being a combo weapon, even in pre-order builds, the Paddlesaw has its own blueprint.
Combo Vehicle Blueprints
Despite not being a combo vehicle, the Thrasher from Episode 3 has its own blueprint.

A placeholder combo vehicle blueprint. This is the graphic used for 3 unknown combo vehicles: The Hedgehog, the Horse and Chariot, and the Flametruck. The same image exists in Dead Rising 4
Skill Move Graphics
Although the skill moves themselves aren't unused, they don't show up in the skill move page. There's also a border that's cropped out in-game for all skill move graphics.
Graphic for grabbing a zombie. Is referred to as the "Hostage Grab".
Graphic for the default skill move. Is referred to as the "Hostage Kick".
Player Avatars
Strangely, 5 images titled "Avatars" can be found. Their purpose is unknown.
Book Buff Icons
When a book is equipped, a unique icon will show up at the top left of the screen. The unused books in the Item Icons section have these.
Game Summary Screen
Unused ending graphic intended for Ending X. Despite this, the image is from Ending E.
Icon intended for the Challenges summary.
Icon intended for the Combo's Built summary.
Icon intended for the Level Reached summary.
Icon intended for the Side Missions Completed summary.

Map icons also have minimap versions that are just lower quality.

Map icon relating to Spec Ops. Possibly either a Spec Ops indicator or a Spec Ops checkpoint indicator.
Map Icon for an "Unknown" ranking for the challenges.
Map Icon for a vehicle. Strangely, it has no transparency.
Minimap Icon for a floor indicator.
Start Up Graphics
Even the game's start up screen has unused graphics.
Logo for the game's engine.
Interaction Icons
Interaction Icons are seen when in range of something the player can, you guessed it, interact with. Some of these icons go unused, however.
A drink icon. Looks similar to the food icon that's used in Uncle Billy's Buffet, so it may have served a similar purpose.
A driving icon. Might have been intended for getting into vehicles. In the final game, the icon uses the vehicles category.
Interestingly, an icon for entering a different level, despite the whole map having no loading screens between areas.
A locker icon. The final game simply uses a hand icon for the lockers.
A trunk icon, intended for car trunks the player can open throughout the city. The final game simply uses a hand icon for opening the trunks.
Miscellaneous Graphics
Graphics that don't fit with any other category, and don't have enough similar graphics to get their own.
Graphic related to the exploration sections of the story. Where this would've been used is unknown.
Icon relating to the challenges.
Unused sickness icon. Specific purpose is unknown.
Fists icon intended for the inventory.
Graphic relating to the "Truth Has Vanished Into Darkness" screen.
