Automatoi
While there are no unused enemies, skins and meshes that are related to Automatoi enemy, Automatoi Champions were supposed to use weaker version of Energy Shields and Detonate on Death skills, just like their stronger versions from Olympus. The only reason of why they're not doing this is because they're not given any mana at all, and both skills consume mana to be used (yes, even the one that is triggered upon Death).
Bat
A spectral mesh & skin exist for the bat enemy. Since there are no skills involving summoning bats and no bat summons exist, the texture is left unused. The mesh, however, is used for four heroic bats with unique skins. Additionally two test bats, bat01 and batspectral01, exist in files and can be placed in the Editor. They're pretty much weak, and batspectral01 uses spectral mesh.

Boarman
While there are no unused meshes and textures for the current Boarman monster, there are unused slightly stronger variations for Enforcer, Mountaineer and Thane, with "bm" prefix instead of "am", indicating that they were supposed to appear in areas further than the first encounter with common troops. They look and act identical to "am" Boarmen, minus the fact that they have higher stats and higher levels.
The most possible location for "bm" Boarmen to appear is the monster camp located prior to Athens City. However since both Athens and Military Camp utilize the same polls for monsters, those "bm" variations went unused.
However, there are leftovers of the alpha Boarman, that are in full working condition: There is a texture, there is a mesh with working skeleton, and there are animations made specifically for this old mesh! The only problem that the mesh has is that it cannot properly equip Boarmen's armor, which obviously wasn't made for this mesh at all.

Centaur
In the sub-folder "old" three additional centaurs can be found: centaurblue01, centaurbrown01 and centaurtan01. All three share same stats, same levels, same controllers and same skill sets (Hunting mastery at level 2, Ensnare at level 1 and Spear Training at level 2). They also don't possess any names and any equipment. They seem to be testing leftovers from the Alpha version, which is indicated by the meshes that they use (CentaurBlue01.msh, CentaurBrown01.msh and CentaurTan01.msh) and old animation names, which don't exist anymore. Only one skin and its bump remain from the Alpha Centaur design in files, and nothing else. What's interesting is that horns from the alpha texture are missing on the bump file, meaning that they weren't presented on the alpha model at all.

Crow
Five unfinished crow heroes exist in the game that cannot be encountered. In files they're named as "Child Snatcher", "Dire Flock", "Plague Feast", "Plague Talon" and "Stymphalian Crow", with corresponding levels of 8, 7, 13, 7 and 11. Well, only their file names use those names, because they're actually reusing two names of common enemy crows. They don't possess unique skills and even their stats are lower than max level crows and plague birds, meaning that they were left unfinished quite early. All 5 of them have same mesh and size, and use the same unique green crow texture in which the crow skin (not feathers) is painted green instead of pale.
Despite this fact, one of them does actually appear in credits along with other monsters when the player finishes the game.
In addition to the unused crow heroes, three more test crows exist. While carrionbird01 (named Carrion Pecker) and carrionbirdolivepest (named Pesky Crow) share the same mesh with different sizes, the carrionbirdspectral01 (also named Carrion Pecker) uses a special spectral mesh with spectral texture that aren't used either since no crow summons exist.

Cyclops
A singular champion Cyclops exists in the Cyclops folder. In comparison to the only cyclops that the player encounters in Greece, Polyphemus, he has lower stats, level, slightly smaller size, lacks all skills that Polyphemus has (instead he, for some reasons, has Survival Instinct) and an incorrectly named path for its controller, meaning that in game he does nothing. Additionally he possesses a random Greece club instead of always using cyclops' club. It'd be interesting to have unnamed cyclops as uncommon champion monsters to encounter later in the game, minus the fact that the language file for monster tags lacks a tag for unnamed cyclops, meaning that such idea was dropped pretty much early in the development.
Additionally, Polyphemus has a cut scripted sequence in which he'd smash the dead tree into pieces upon leaving the cave and then roar. The corresponding skill for it named Cyclops_TreeBreakerRoar still exists in his skill set, and attackable tree props are still im the files, but since those trees were removed from his location and the sequence has long been turned off, Polyphemus doesn't do the cool introduction anymore.
Ermatheon Boar
An early version of Monstrous boar, named ermantheonboar, can be found in the separated folder with the same name. The texture has less damaged spots, and the mesh doesn't have any asymmetrical elements. It could be used for one of heroic boars named Erymanthian Boar, but it and other heroic monstrous boars use same visual as other monstrous boars.

Giant Turtle
A mesh exists that was made for rumour/boss Giant Turtle. It's unknown where the player would fight the quest turtle, because there are no quests in Greece that would involve fighting specific turtles, and no turtles who use this mesh exist.
In addition to that, the Ichthian attack on City of Megara also was supposed to have turtles participating in it. It's supported by the existence of melee & ranged turtles in the "Rumormonsters" folder containing all enemies who are related either to quests directly or indirectly or to any map scripts, with both having variations for levels 9 and 11. Those turtles seem to be cut from the attack early enough, because ranged rumour turtles seem to be copies of melee turtles minus their names, which are identical to normal ranged turtles. The melee rumor turtle is named as just Giant Turtle instead of being Mud/Salt/Coral Snapper.
Gorgon
A mesh exists that was made for rumour/quest common Gorgons, which is weird because no quests involve fighting common variation of Gorgons. It could however be a leftover from the quest involving killing either harpies or gorgons in Athens in specific areas. What's weird is that there's no rumor/quest mesh for Queen variation, which could be used for the three Gorgon Queens that the player fights: Sstheno, Medusa and Euryale.
Speaking of Gorgon Queens, their skill trees mention the usage of two cut skills - Gorgon_SummonGuards & Gorgon_SummonArchers. Those skills would summon common Gorgons (that are labelled as "Gorgon Minions" in files), melee and archer variations. How much would they summon them and how good would they be equipped is unknown since those skills don't exist anymore, and no Gorgon summons can be found either. And only Gorgon_SummonGuards is written in the Skill Configuration section. Euryale with Sstheno both were supposed to use Petrify, which is written in their skill trees but is turned off in Skill Configuration section, and Sstheno with Medusa were supposed to cast Regrowth upgraded with Accelerated Growth and Dissemination, which isn't even written in Skill Configuration and Rergrowth with Dissemination have level 0 in the skill tree (Accelerated Growth is set to have level 1).
And the last but not least, the "anm" folder inside "gorgon" folder contains three strange gorgons. The first gorgon is internally named as _medusaminion, always spawns with helm and was supposed to sometimes spawn with body armor and armbands, but because both of them are incorrectly referenced in the file, they don't appear. Always spawns with spear and sometimes spawns with one of two shields to pick, one of which uses a design that normally does not appear in the normal gameplay. Uses non-existing controller, so her AI is broken. The second gorgon is internally named as _medusaminion_archer and is mostly the same as the first gorgon. She doesn't use any melee, but always spawns with one of two bows to use, one of which is not referenced properly so instead she has a 50% chance to spawn with nothing and stand in T-pose; The third and final gorgon is internally named as _medusaqueen, has same problems with body armor and armbands as the other two, has two more bows as a choice to use (still including the broken one), and also has broken controller. Both _medusaminion and _medusaminion_archer are named as Sssssssssssexxsssssssy (yes, that's how they're named in the game and in Art Manager), while _medusaqueen is named as "Mrs. McSnake".
Hydra
The infamous Lernean Hydra from original game's cover and that is only fightable on Legendary difficulty has a variation located in "hydra" folder. This variation is very unfinished: It is level 19 and its stats aren't balanced around the level at which the player could fight it at Normal difficulty, and even if they were balanced, the Hydra itself does nothing since it uses default AI controller that isn't finished yet, which also causes her to not properly die when health reaches 0. It lacks all skills that the Lernean Hydra has and instead has the strange passive poison resist at lvl 10 and that's all. Lacks race keywords and "Boss" monster classification, but it looks identical to the Lernean Hydra.
Limos
The infamous life-eater demon from Greece was supposed to have two more champion variations - Plague Bearer and Soul Stealer. While Soul Stealer does appear along with Life Eater on Olympus and barely having any differences, the Plague Bearer was left unused completely. Its only difference is that instead of Life drain skill it uses a strange skill named "Disease", that drains both health and mana and works weird. The idea of having those two champions might be dropped pretty much early, because only levels 8 exist for both of them, while Life Eater one has variations for levels 8, 11, 13, 15 and 17. Plague Bearer also uses a skin that is not used by any other Limos.
There's also a test Limos with working controller and no skills, internally named as Limos02 and being named as Limos the Driver.

Maenad
One unused skin for Maenad exists in files. It's named as rangeda and it gives Maenad a teal skin color with brown hair and grey clothes. While rangedb and rangedc are used for Maenads who attack Delphi, rangeda is fully unused. Additionally, Assassin's transparency is not part of the texture, but rather part of the mesh that uses the texture. The texture itself by default is never used in full visibility.
Minotaur
A champion version of the Minotaur Lord boss exists but is never used. Its major differences are significantly lower stats, slightly smaller size, lack of all Boss variation's skills (only has dual Weapon training from Warfare mastery and Minotaur Stomp that is used by Olympus minotaurs), monster classification being Champion instead of Boss, having halved chance for equipping either of armor pieces and doesn't always spawn with two axes. What were early plans for this Minotaur champion is currently unknown.
Additionally there are two Minotaur Conquers with levels 19 and 21 located among other rumour monsters that seem to be tied to a cut scene. Where the scene was supposed to be is unknown, but the existence of the scene is proved by a cut villager voiceline. They seem to be fully copypasted from normal Minotaur Conquers.
The last unused Minotaur is "audiotestboss", who most likely was used to test some kind of an audio. Doesn't have anything else interesting other than the name, which is Ground Breaker^nMinotaur Warlord.
There are two unused skins for minotaurs, one for normal and one for the minotaur lord, and unused minotaur mesh. The normal minotaur unused skin makes minotaur look brownish and darker rather than yellowish orange. It's unknown why it's not used, and it wasn't even reimplemented in Anniversary Edition, where Minotaurs Ground Breaker have received a chance to use Elder Minotaur's skin as an alternative texture. The minotaur lord unused skin is located in Minotaur Lord's separate folder (where texture for the elder variation and the mesh itself are also located), makes him slightly yellowish with higher contrast, making his back appearing darker than normal. And the unused minotaur mesh looks identical to minotaur lord, except for the fact that it's located in normal minotaur's folder instead of minotaur lord's, and has bigger file size for some reasons.

Orthrus
Special orthrus variations exist made specifically for Olympus named as Brimstone Orthrus. Their main difference is that they're much smaller than their Greece breed and they have upgraded fire breath, which they use much more frequently and that is stronger. In early release versions they used to have a chance to appear in the same segment where player encounters Limos demons. For some reasons their proxy was removed from the proxy pool in later versions, and they were left unused up until the Atlantis addon, which has added Tartarus, which has a chance to use one of Brimstone Orthrus polls as a possible enemy to encounter. Prior to Anniversary Edition they used the darker skin, which ended up being used for the special Shadow Maw hero, while the original Brimstone Orthrus ended up sharing same skins as Greece Orthrus. Since they're not used, the darker skin is also unused either.
There's also an unused defense skill internally named as orthus_rockskinshield, which would increase the defense of the user. Would every Orthrus have it or someone specific - it's unknown.
There's also a test Orthrus named Double Death. Nothing else special to note about this test enemy, other than his working controller.

Satyr
Satyr brutes were supposed to have unique leggins armor piece, based on the equipment data. No such item exists, and gathering leftover data from files reveals that the leggins ended up becoming the beginner level leg equipment that the player can obtain in the very beginning. The unique inventory icon still exists.
There's an unused Satyr Raider in "quest" sub-folder of Satyr's folder, who seems to be a leftover from the early quest. His controller doesn't exist, barely has anything to equip and has same level on all three difficulties.
Four skins that are leftovers from the alpha model. Those include normal brown satyr, black satyr, grey satyr and "decaying" satyr. While the Satyr creature mesh no longer exists, the model itself is technically in the game in a form of a decorative corpse. Since it's a static prop with no bones attached to it, it cannot be used as a monster. In theory, the decorative corpse can be turned into a working mesh through a lot of editing.

Talos
Talos has one unused skin and one unused mesh. The unused skin makes Talos look like he's made out of bronze rather than out of brass, while the unused mesh removes half of plates on Talos' model, partially exposing his endoskeleton. This mesh was used in one of promotional images before the release of the game. Where could those be used is unknown since player fights Talos only once, at the entrance of Minos' labyrinth and only on Epic and Legendary difficulties.
There's also a test Talos whose sole purpose is to be just a test. He has no unique name, no skills, no working controller, just a test giant animatronic and that's it.

Warbeast
Boars, or Warbeasts according to the Editor, have three more unused skins to use. The current boar uses "A" skin, while the Dusk boar uses an unique skin. The three unused skins are labelled as "B", "C" and "D". While the "C" variation was added to the skin rotation of Dusk boars along with their base skin in Anniversary Edition, and "B" may sometimes be used by the prey located in The Boar Snatcher's cave (also in Anniversary Edition), the "D" skin is still left unused.
A test boar exists named "warbeast01". Nothing else to note other than non-existing controller and internal name being "War Beast".
