This snake enemy was found in memory alongside other enemies, but no such opponent is ever used in any stage.

On the continue screen Beetlejuice moves his head to the proper "body" to either continue or end. The image on the left is the one used in the final; however, a look at the tiles in memory seem to indicate this sprite is cobbled together from a larger, more awkward-looking sprite.

The game uses a special type of compression for its text that assigns specific strings to certain bytes. The above, found at address 108BB, are never used.

These may be leftovers from the prototype, where instead of the Book for the Recently Deceased you had to find the Spook Scroll, which contained a password. The end result (allowing you to access the shops) is the same.
