Shamrock Freddy Assets
When Shamrock Freddy was first introduced, the older version of the gift box for his shop assets was more simplistic. The textures were later revamped for the first "Blast from the Past" delivery event.

There were earlier versions of Plushtrap's store assets that showed a gray CPU rather than a golden CPU.
Profile Packs
When Illumix was adding profile packs, they mistook Lefty's icon for Toy Freddy and Springtrap's icon for Plushtrap's.

Super-Shocker
An icon for the super-shocker item, judging by early master data this device would have decreased the time it takes for the shocker to recharge from 3 seconds to 0.25 seconds.

Subscription Service

The asset that would be displayed when you are on the confirm screen to buy the VIP pass.
Judging by these unused assets, it seems like a subscription service of sorts was originally planned, though it has yet to appear in the game. But we do have details on what it offered!

In the same files Lefty was found in, Plushtrap could also be found. He had his original map icon that was previously only seen on Joyrok's page (More on them on the "Prerelease Info" page)!

Older versions of the Remnant icon seen when fighting Shadow Bonnie. These can be seen in some early prerelease material.
Dark Circus Profile Frame
When Illumix was developing Dark Circus: Encore! (Episode 1 DLC), they originally planned to re-run the original Dark Circus event that would have included this asset over your 2D profile icon. This went unused along with a store skin that was later reused for when Dark Circus makes it's return every year.
Red "Mystery Reward"
When Illumix was adding Funtime Freddy, they added two different gift assets to the rewards asset bundle. There is a purple one, which ended up being used to tease the free BonBon 3D Jumpscare avatar icon. But there is also a red one that has gone unused since. Given the naming, perhaps there were going to be other surprise rewards in the future.

There are a whole host of photobooth frames that were cut before photobooth relaunched with frames.
Normal Maps
Funtime Freddy Normal Map
When Ringmaster Foxy first released, they accidentally included Funtime Freddy's original normal map texture in Ringmaster's wear and tear materials.
After Illumix discovered this, they quickly fixed it. Now that Funtime Freddy is officially released, they somehow undid the fix and now his remastered normal map texture is back in Ringmaster's wear and tear materials. How did this happen?!
Lefty Normal Map
Similarly, in Magician Mangle's asset bundle, a normal map for Lefty could be found.
Misc. Textures
Early Shamrock Freddy Albedo
Before Shamrock Freddy was released, he had a cleaner albedo (base color) texture. He reused regular Freddy's other textures as well
Encounter Background (Attack)
There was a grungy version of the encounter screen's background. It's possible this was going to be used if an animatronic's aggression was high enough for you to be forced to encounter them.

There was going to be a purple version of the purchasable buff pack balloons you can buy from the store.
Equipped Mod asset
This would appear behind a mod that was on an animatronic in the Workshop UI

Tab Icons
There are early versions of all of the tab icons that have a streak under them. In-game they only glow. The only exception is the balloon's selected asset.

Map Assets
The player icon was at one point going to be a compass.
