The Cousins Bellic
There is an unused objective that tells the player to drive to the food vendor. This was possibly scrapped in favor of introducing it once you walk out of your safehouse.
Drive to the food vendor.
The audio in this mission has a somewhat unusual design, it is unusual because the developers split the fully recorded sentences into parts, and all of this have been left in files, from where it became known that one of Niko's lines was shortened.

It's Your Call
This mission has very little interest in unused content. There are a few strings that are never shown or replaced by a different string instead.
The phone tutorial was a bit more "naggy" than usual.
At the end of a call the phone is automatically put away.
Press INPUT_PHONE_ACCEPT to enter the Menu.
Your phone is ringing.
Press INPUT_PHONE_CANCEL to hang up during a phone call.
Select Options and press INPUT_PHONE_ACCEPT .
Press INPUT_PHONE_ACCEPT to call Roman.
Same with the vehicle tutorial, but with less strings.
Hold INPUT_VEH_LOOK_BEHIND to look behind. Releasing INPUT_VEH_LOOK_BEHIND resets the camera to its default position.
When in a car press INPUT_VEH_LOOK_LEFT to look left or INPUT_VEH_LOOK_RIGHT to look right.
Press INPUT_VEH_LOOK_LEFT and INPUT_VEH_LOOK_RIGHT simultaneously to look behind.
After arriving at the destination, Roman has an alternative version of the dialogue about calling him when Albanians show up, in which he sounds more serious. In this dialogue he doesn't say anything about Albanians but rather about some people.

There are a few extra strings that tell you to evade the loan sharks. Also, there is a string if you blocked the entrance of the gambling den. If you do block the entrance, the generic "loan sharks have been spooked" line displayed and you fail the mission.

Evade the loan sharks.
The entrance to the gambling den was blocked.
Here come the loan sharks.
Lose the loan sharks and take Roman back to the cab depot.
It seems that in this mission it was unacceptable to arrive at both the hardware store and the cab depot with a wanted level, as evidenced by these lines from Roman

In the final version, the game automatically removes the wanted level as soon as the player arrives at one of these locations.
For some reason, there are strings when the player either passes or fails the mission. These may have been used for debugging purposes.

Gambling Phonecalls
There are a couple of unused phone calls from Roman in the files, where he asks the player what he should bet on in underground games. Judging by the fact that Niko calmly answers and has no problem taking part in it, he does not know about Roman's gambling addiction yet.

Three's a Crowd
There aren't many changes in this mission, the biggest one being that the dialogue on the way to Michelle's place has been shortened, including its alternate version.

There is also a couple of other things worth noting that may be related to this mission:
- The in-game (not cutscene) models of Mallory and Michelle have unused glasses models that could probably be used in this mission.
- According to where Michelle's apartment interior is located, the initial destination could have been in East Hook instead of Rotterdam Hill, in both cases the place is located on Mohawk Ave.
Bleed Out
The mission is full of various small unused things. The first thing is when driving to the court, Roman could call one more time to hurry up the player.

Right after that, Roman has another unused line, this time he hurry's up the player to start chasing Dardan.

After dealing with Dardan, or while chasing him on foot, there was a moment where Niko could say a line about nice view, most likely view on the city.

There is also couple of other things about this mission that worth being mentioned:
- Ingame model of Roman has a unused beat-up pants texture that resembles it's early look, it could've been used in this mission or in Hostile Negotiation, in the final game none of these missions have such detail.
- The anim.img contains couple of early and unused Roman injured animations.
Hanging Out Phonecall
After completing the Bleed Out mission, the player has the ability to start hanging out with Roman, but the player finds out about this suddenly when Roman calls him and already offer the player to go somewhere. It turns out that a phonecall was provided in which the player would be warned that he can start hanging out with Roman, this also applies to all the other friends that the player makes as he progresses through the game.

Easy Fare
This mission recieved some simplifications in it's final look, for example, at the beginning of the chase, Jermaine had to say to drive through the fence, which was shortened in the final version of the game, because of which this line would not have made much sense if it was used.

The fence itself was complete at some point, as evidenced by the LCPD recruitment advertisement on CNT TV show.
The .gxt file contains unused text for a couple of hints that indicate that Pay 'n' Spray was meant to be used in the mission, rather than unlocked after completing it.
Drive into the Pay 'n' Spray.
Reverse out of the garage.
There was also a need to exit vehicle, for unknown reason.
INPUT_VEH_EXIT exit vehicle.
After escaping pursuit, Jermaine was supposed to say a line that was replaced with text in the final version of the game.

It seems that if the player drove poorly or even destroyed the car, a short dialogue would occur between Niko and Jermaine.

There are not many changes in this mission, the first thing to note is that there is an unused alternative line from Jacob when picking him up (according to the .gxt file).

Cheating on Mallorie
It seems that Roman was indeed successful with women, as evidenced by the unused phonecalls.

These phonecalls eventually lead to a phonecall from Mallory herself, where the player had the choice to either tell the truth about Roman or lie.

Bull in a China Shop
According to the unused objectives, Niko was supposed to go inside the shop and destroy the vases. It is extremely likely that the baseball bat seen in the opening cutscene would have been given to the player originally to do so. Vlad's mouth still moves after Niko says he doesn't need the bat, suggesting cutscene was trimmed down. Beating up the owner's son was seemingly also planned.
The audio files describe this mission a bit differently than the objectives do. An interesting fact; the interior of the shop is mostly solid (a wall in the back lacks collision) and every item is breakable. This may mean that the original plot of this mission was cut late into development.
Once the mission starts, Niko complements the shop. The shop owner then mentions Vlad. This makes no sense since Niko never mentioned Vlad yet. He has two more unused responses to the owner until he starts to smash the vases in the shop.

Apparently, Niko had a choice to either give him the Vodka or kill the shop owner.

Vlad is dead.
Press R3 to look behind.
Use INPUT_AIM and PAD_RSTICK_ALL to target the son.
The shop is locked.
Convince the owner to pay.
Now smash the other window.
The shop owner's son is dead.
Beat up the son.
Hold INPUT_AIM to target the son.
Some code for beating up the son was left in the files, and was restored into the game. While the code is broken, it gives a good sense of how the scene would have played out, with the shop owner running out the shop and the shop becoming accessible to fight the son inside. Hung Out to Dry
This mission's unused content doesn't make it much different, unlike Bull in a China Shop. Just a few extra lines were omitted.
This exchange was supposed to start after Niko enters the laundromat and opens his mouth. Instead, the shop keeper throws the laundry at him and tells him to stay away.

Clean Getaway
There is no actual unused content in this mission, except for one unused objective and a detail about Vlad's phonecall.
Walk out of the garage.
In a phone call when player takes the car, Vlad tells to drive the car to a car wash on Saratoga Ave which is located in Willis, but the game displays a marker on Tutelo Ave in Beechwood City, either this was a mistake or the player was originally supposed to go there, although nothing prevents player from visiting second car wash.
Provocative Call
At some point during Vlad's missions walkthrough, the player could receive a provocative call from Vlad, where he obviously called Mallory, but "accidentally" dialed the player.

Apparently, while running from the player, Ivan should have encountered more obstacles on his way, most likely the workers of this construction site.

Uncle Vlad
An unused text hint makes it clear that in this mission the player must have a vehicle, in the final version the game doesn't care how the player gets to the bar or chase Vlad afterwards.
You need a car.
When arriving at the place, Niko has an unused alternate line where he tells Roman to stay outside.

It seems that if the player arrived at the bar without a car, Roman could bring one, it only can be assumed that it could have been either a Roman's Taxi or Sentinel, why Sentinel? that's because if mission gets failed without having any vehicle before, the game starts a small cutscene where Niko and Roman wiil be sitting in Sentinel next to the cab depot.

Concrete Jungle
This mission was more varied originally. The first thing to note is that Jacob's ability to sell (or give for free in case with this mission) weapons could have been demonstrated in this mission, where he could offer Niko to get the guns from the trunk.

Take a weapon from the trunk of Jacob's car.
Access the trunk by approaching the rear of a vehicle and pressing INPUT_PICKUP.
Jacob has two lines related to offering the player to take weapons from the car's trunk, and it seems that it had some sense behind it. In the .gxt file one of the lines is signed as LJ1_GUN_1
, while the second line is signed as LJ1_NOGUN_1
, probably the developers wanted to make a check for a situation where the player does not have any weapon, in such case Jacob could've offer to take the weapon from the trunk. In the final version for such cases the game inexplicably gives the player a pistol in case if he does not have any weapon for the upcoming shootout.
The next part is even more interesting. In the second half of the mission after clearing the room, Jacob could've say that there should be more enemies upstairs that needed to be dealt with.

Waste the drug dealers and save Jacob.
The only problem is that the rooms at the second floor were completely removed, but the model of the second floor of the apartment still has windows from this very room, which indicate that it existed for some time, in addition to this, there are other leftovers of this part of the interior.
As a result of the shootout on the second floor, one of the enemies had to escape to the roof, as evidenced by these lines from Jacob:

The second line is used in the final version of the game, but it was connected with this cut part.
There is a bit of an oddity at the end of this mission where after the shootout ends the game tells the player to take Jacob to Homebrew Cafe, and after this prompt if the player gets in the car Jacob may say one of the following lines:

These lines sound like the player let the last target escape and Jacob just says to take him to the Homebrew Cafe, however, aside from the audio oddity, there are no any leftover that would prove the presence of such detail on this mission.
Crime and Punishment
If the player does not show up for this mission for a long time, Roman supposed to call to remind the player that he's still waiting.

According to an unused text hint, the game could check if the sirens of a cop car were broken, perhaps the system of these sirens worked a little differently, since in the final version of the game the state of the sirens does not matter, even if they are broken the car will still be able to play the sirens sound.
Find a cop car that doesn't have a busted siren.
There is an unused alternate dialogue when the player finds a police car.

After arriving to the garage, the player had to get out of the van himself, probably at that time there was no cutscene where everything is done automatically.

Do You Have Protection?
For some time this mission had a placeholder cutscene, this is not the only time where the developers left a line of text notifying about this, but such cases are pretty rare.

In this mission, Dimitri was somewhat impatient with the player getting transport, as evidenced by these lines that would be activated at various stages of the mission.

It seems that if the player had shot not in the leg but another part of the body, it would not have caused the mission to fail, as evidenced by these lines from Dimitri

Asking for a Drugs
Seems that after completing the Do You Have Protection? mission Faustin could have called Niko to ask if he has any drugs. Since this mission is the first one which shows that Faustin using drugs, it makes sense that he could have called after completing it.

There isn't much content in this mission, except for a couple of things worth noting.
In the phone call, Faustin says that Lenny is at the Guantanamo Ave station, when in fact the station is at Windmill St. In the files, there is an early texture of the station sign, which indicates that Windmill St. station used to be Guantanamo Ave station.

Similar to Do You Have Protection? mission, this one also had a placeholder cutscene at some point.

The mission required chasing Jason on a motorcycle that game gives at the start of the chase, as evidenced by this line:
Get back on the bike, the biker is getting away.
Now the most interesting part. According to the unused text, the original place where Jason were supposed to go was not the forest, but a gas station.
The biker is heading into the gas station.
Gas stations are full of explosive objects.
You can blow up gas pumps.
It is also seems strange that the text says only about one biker but not the others, maybe Jason was not supposed to meet up with other bikers during the chase?
Also, Jason has an unused helmet model that doesn't fit at all in the final cutscene look (before the chase begins).
After completing this mission, Faustin could call and warn Niko that he has no chances with his daughter.

It seems that initially the tailing had a different system, in which the game would inform the player if he gets too close to the dealer, in the final the game does not give any information and the dealer immediately gets spooked if player makes any mistake.

Some strange lines that would probably meant to be triggered if the player decided to target the dealer with a weapon, in the final version the dealer doesn't care about the weapon and will only run if the player gets too close to him.

It seems that the player could injure the dealer during the chase and keep following him, in the final game the dealer is very vulnerable to any damage and immediately gets knocked down, thus causing the mission to fail.

It seems that after the Rigged to Blow mission, Faustin could have called Niko and ask him if he knows anything about the Dimitri and Ilyena. There is no exact indication of when this call should have been made, but the most logical seems to be this mission, or it should have been made after No Love Lost, although there is also an unused phonecall.

In one of Faustin's missions, the player would be able to call Dmitri and get different answers from him, but it is unknown which mission this would apply to, since Crime and Punishment has its own unused phonecall lines from Dimitri, and in the case of the other missions, Dimitri either does not participate or already has unique answer used by the game (Final Destination for example). This probably has something to do with early mission design or something else.

It seems that initially the developers wanted to make The Master and the Molotov mission time-limited, for which they made several phonecalls from Dimitri, where he would name the specific time for the meeting. In the final version of the game, all this was replaced by a simple SMS message.
