Copy Abilities
Beam Kirby
Beam Kirby has an unused palette that only changes the dark orange highlights around the hat's outline to be even darker.
It can be found at 0049FC18, 004BBAEC, and 004C5AD0 in the Japanese, American, and European versions of the game respectively.

It turns Bomb's hat green, which effectively makes it look identical to Sword's hat. The palette used by Sword is not the same as this one, however.

Fire Kirby has a palette that turn his feet and blush into a magenta color and his skin into a darker pink.

Fire Kirby still has his palette from Nightmare in Dream Land at 0049F738, 004BB60C, and 004C55F0 in the Japanese, American, and European versions of the game respectively.
His palette was updated for this game to be darker, as shown in the comparison below.

Master Kirby
Master Kirby still has the palette from the 2003 Demo at 004A0838, 004BC70C, and 004C66F0 in the Japanese, American, and European versions of the game respectively.
The only difference is that the gem in the hilt is green instead of red, as it shared its palette with Sword's hat, which was used in the Demo.

Missile Kirby
Missile Kirby has an unused palette at 004A06F8, 004BC5CC, and 004C65B0 in the Japanese, American, and European versions of the game respectively.
It changes Kirby's blush, feet and a tiny portion of his hat to be a more saturated magenta color.

The Missile itself also changes, though not as much as Kirby. In its case, the middle row of pixels near the top, as well as the pixels surrounding the white pixels at the bottom of the graphic also change to be the same saturated magenta color.

Throw Kirby
Throw Kirby has an unused palette that only changes the white pixel on his foot to be lighter. That's it.
It can be found at 004A0038, 004BBF0C, and 004C5EF0 in the Japanese, American, and European versions of the game respectively.

UFO Kirby has an unused palette that only changes the grayish pink parts of his robotic arms to be simply gray.

Wheel
Wheel Kirby has an alternate palette at 0049FE58, 004BBD2C, and 004C5D10 in the Japanese, American, and European versions of the game respectively that slightly changes around the red and pink colors of his cap to be slightly darker.
The differences are more apparent near the white parts of his cap and around the highlights of the black outline.

Jack
Jack has unused palette at 004A1A58, 004BD92C, and 004C7910 in the Japanese, American, and European versions of the game respectively. It looks similar to the used one, but the last 4 colors are changed to be pure black.
While Jack itself doesn't change, its star-shaped projectiles do, as shown below.

Parasol
The Parasol enemy has an unused palette at 004A1CF8, 004BDBCC, and 004C7BB0 in the Japanese, American, and European versions of the game respectively. It includes the following colors:
Almost everything is black except for the initial square, which uses a dark blue color. When applied to the Parasol, it effectively turns it pitch black.

King Golem
King Golem has an unused alternate palette that includes yellowish colors instead of the usual light pink colors.
It's located at 004A15F8, 004BD4CC, and 004C74B0 in the Japanese, American, and European versions respectively.

Not only that, but his body also has an unused palette. His body isn't a sprite, but rather, a tileset, so this palette is stored as a background palette separate from his face palette.

Dark Meta Knight
Dark Meta Knight has an unused palette that's similar to his 2003 Demo appearance, but it's slightly different, as the Demo's palette was darker. This time, his eyes are yellow, and the rims on his shoulder plates are golden. The rest of his colors are similar to his appearance in the final game, but he notably looks more saturated thanks to the golden highlights.
It's located at 004A2B58, 004BEA4C, and 004C8A30 in the Japanese, American, and European versions respectively.

Other
Inhale
This palette is used by Kirby when transformed into one of his Copy Abilities. However, it contains three unused colors that depict an earlier version of the inhale effect.
The colors were made to be darker for the final graphic.

This can be seen in game thanks to a bug involving one-time Abilities, like Crash and Cook. If the player uses it, Kirby will remain using the palette above, and will only correct itself after getting hit or by entering another room.
Peppermint Palace
While not really unused, the palette used for the windows outside the main building of Peppermint Palace has some unused shades of green and blue.
The game can apply this palette to the pine trees outside the building. It gives the trees the same colors from their used palette, but with a black shadow and a purple trunk.
