A much less detailed version of the logo with 仮(temporary) written on it can be found in the game. It is similar to the logo used at the game's announcement at Game Developers Conference 2011, which has a tail and lacks the "temporary" label.
TempStaffRoll
A very primitive staff roll, containing only "制作 東京制作部"(Produced by: Tokyo Production Division and "おわり"(The End).

A cropped version of Super Mario Galaxy 2's Wii Message Board image for when you beat the game, with a heart inserted.

Rainbow-Bordered F
Found in RomFS\LayoutData\layout.arc is an image of a black F with a rainbow-colored border.
This image is a leftover from Nintendo’s Software Development Kit, and is used as a template image for layout files.
Binary Text Images
A set of four images depicting 0s and 1s, found in RomFS\LayoutData\layout.arc.
These images are also leftovers from Nintendo’s Software Development Kit, and serve the same purpose as the previous image.
Super Mario Galaxy Dialogue Icon Font
Found in RomFS\LocalizedData\UsEnglish\LayoutData\Font.szs is a font file named PictureFont20.bcfnt.
Interestingly enough, it features almost all of the dialogue icons from Super Mario Galaxy and Super Mario Galaxy 2.
