The artworks used below:
There is an unused graphic named "remocon01", which as "remocon" is a shortening of remote control, was certainly an unused version of the tutorial windows. Said unused graphic just uses lower quality versions of pre-existing artwork made for Kirby: Nightmare in Dream Land.
Abilitytest
File location: DATA/files/lyt/step/game/ability_icon/Water.arc.cmp
Inside Water's ability icon files, there is an unused HUD icon which certainly would've been a placeholder as not only it is named "Abilitytest", but the text on the graphic says 仮, which means "temporary". It also makes sense that said graphic would be inside the files for Water as said ability was the first ability made for the game.
Unselectable Kirby Icons

There are unselectable icons for not only thee P2/Yellow, P3/Blue, and P4/Green Kirbys, but even the P1/Pink Kirby as well. As you can have multiple Kirbys at a time in-game unlike Meta Knight, King Dedede, and Bandana Waddle Dee, this renders these icons unused.
In order, P! Kirby's is named infoface01_5, with infoface01 referring to P1 Kirby, while the others are named KirbyYFaceGray, KirbyRFaceGray, and KirbyGFaceGray, though it's unknown if those icons were from before or after P3 was switched from red to blue in development.

Inside the files for the select mission HUD graphics used for Scope Shot, there is an icon for Red Kirby, which you guessed it, goes unused! However, unlike any other instances of Red Kirby mentioned in the files where it either is just overwritten by Blue Kirby's or in the case for the start menu files for Ninja Dojo, a mention is straight up absent in the files, The icons for Red and Blue Kirby in this instance both coexist together.

The Special Thanks icon in the credits for the Extra Mode has an unused variant that unlike the version used in-game, has gradients and no drop shadow behind it. The unused version is named PositionIcon09 while the version used in-game is named PositionIcon11.
Unused Credits Screenshots

An unused credits screenshot, which not only shows a stage layout that doesn't seem to be in the final game, but also shows that this game was originally going to have its credits screenshots as pictures in the sky like in the credits of Milky Way Wishes and Meta Knightmare Ultra in Kirby Super Star Ultra rather than as framed pictures like in the final game. The filename of this screenshot is Screenshot01.
Despite the fact that there were going to be 20 screenshots as evidenced by the filenames, all of these screenshots are blacked out as shown in the above photo. Screenshot01 is the only one of these unused credits screenshots to not be blacked out.

There are a lot of unused graphics relating to the game's main menu and especially its file select, ranging from earlier versions of graphics for them to an entire unused file select design layout.

Unused File Select Design Leftovers
There is evidence to suggest that there were earlier iterations of the file select. Not only is this evidenced by "titlemenunew" being the name of the folder for where the graphics used for the file select are located, also do note that there is no folder in this game named just "titlemenu", but also several of what appear to be leftover graphics from those designs.
